Savory:  The Bold Peppery Herbs

Summer Savory - annual Savory - Sweeter and more delicate peppery flavor with tones of thyme, oregano and mint.
This annual is fast growing.   The leaves are tender and can be added to salads and used as garnish.  Widely used in vegetable and bean dishes, with red meats, sauces, marinades, salad dressings, vinegars, and pizza toppings.  Helps to reduce flatulence, which is why it is used in bean dishes!  The small white flowers are loved by bees and pollinators.

Winter Savory
- perennial - evergreen year around Savory - Coarser more intense peppery flavor then summer savory.

This evergreen perennial is a dense shrub that only grows to a height of 12 - 15".  It is a wonderful fragrant border plant in the garden, giving color all year long.  The small flowers are loved by bees and pollinators.  This savory can be used in dishes that require long cooking such as stews and bean dishes, stuffing, and sauage.  It can be dried, as it holds its flavor longer and used in numerous dishes.  I enjoy this more intense flavor in my scrambled eggs and salad dressing.

​Lemon Savory
- delicate perennial Savory - delicate Lemon peppery flavor.

This savory is more delicate and with the lemon flavor goes well in chicken and fish dishes.  Use it in salad dressings, marinades, vinegars, and teas.  Toss fresh leaves in a salad or use as a garnish on vegetables.  It is a less vigorous plant.

THE SURPRISE SAVORY
Yerba Buena - California Native - low growing creeping perennial - delicate light minty flavor.
Makes a delicous tea with a unique minty flavor.
